Summer Ready Rhubarb Gin
I'm a gin lover, it's one of very few drinks that I can drink without the fear of a hangover the next day. We've made Sloe Gin before, but I wanted something a bit lighter for summer. So I put the question out there to all you lovely people on Instagram. Almost everyone suggested Rhubarb Gin, so I gave it a go. Let's just say I've found my drink for the summer. It's both delicious and pretty, what more could you want.
Ingredients:
400g/3 long stalks - Rhubarb
5 heaped tbsp - Granulated Sugar
Juice of 1/2 lemon
1 large bottle of gin (I used the cheap stuff!)
Method:
Roughly chop the rhubarb and add to a large clip lid jar with the sugar. Now give it a really good shake up so the sugar coats every bit of rhubarb.
Squeeze in the juice of half a lemon and pour in the whole bottle of gin. Give it another good shake up. This will start the process of dissolving the sugar.
Pop the jar in a dark place for a few weeks and every few days give it a shake to make sure the sugar is continuing to dissolve properly.
It should only need 2 or 3 weeks in the jar before it can be strained and put in bottles ready for drinking.
Now invite your friends over, get the BBQ going and enjoy the warm summer evenings outside drinking your homemade Rhubarb Gin!
